Vinification: Immediate de-stemming and soft pressing. Temperature controlled fermentation in stainless steel revolving winemaker. Maceration 5 days. Fermentation 15 days. Malolactic fermentation in oak barrels.
Aging Process: 3-5 months in stainless steel. !8 months in 50% new French oak barrels (300 liter tonneaux). At least 12 months of bottle aging. Unfiltered.
Tasting Notes
Color: Intense ruby-red, almost impenetrable
Bouquet: Aromas of forest berries, sour cherry, plum, dry leaves and mountain herbs, crocus, licorice and hints of nutmeg and cloves
Flavor: Dry, full-bodied, with velvety close knit tannins, well-balanced with fresh acidity, the finish is long, intense & elegant
Pairings: Lamb loin, T-bone steak, wild boar, barbecued meats
Alcohol Content: 14.5%
