Vinification: Immediate de-stemming and soft pressing. Temperature controlled fermentation in stainless steel revolving winemaker. Maceration 3-4 days. Fermentation 10-15 days. Malolactic fermentation in stainless steel.
Aging Process: 50% of wine 12 months in stainless steel and 50% in used French oak barrels (300 liter tonneaux). At least 12 months of bottle aging. Unfiltered.
