Vinification: Immediate de-stemming and soft pressing. Temperature controlled fermentation in stainless steel revolving winemaker. Maceration 2-3 days and 8-12 days of fermentation. Malolactic fermentation in stainless steel.
Aging Process: 9 months in stainless steel prior to bottle aging for at least 5 months. Unfiltered.
